Brodetto is considered a tomato-based seafood stew that was traditionally prepared by fishermen along the Italian coast with the catch they could not sell
Ingredients:
- 1 kg of mixed seafood (like shrimp, mussels, and squid)
- 2 cloves of garlic, minced
- 1 large onion, chopped
- 2 ripe tomatoes, chopped
- 1 cup of white wine
- 3 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the garlic and onion, and sauté until they are soft and fragrant.
- Add the tomatoes to the pot and cook until they start to break down.
- Add the seafood to the pot and stir to combine. Cook for a few minutes until the seafood starts to turn opaque.
- Pour in the white wine and bring the mixture to a simmer. Cook for about 20 minutes, until the seafood is fully cooked and the flavors have melded together.
- Season the boreto with salt and pepper to taste. Garnish with fresh parsley before serving.
