Brodetto

Brodetto is considered a tomato-based seafood stew that was traditionally prepared by fishermen along the Italian coast with the catch they could not sell

Ingredients:

  • 1 kg of mixed seafood (like shrimp, mussels, and squid)
  • 2 cloves of garlic, minced
  • 1 large onion, chopped
  • 2 ripe tomatoes, chopped
  • 1 cup of white wine
  • 3 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the garlic and onion, and sauté until they are soft and fragrant.
  2. Add the tomatoes to the pot and cook until they start to break down.
  3. Add the seafood to the pot and stir to combine. Cook for a few minutes until the seafood starts to turn opaque.
  4. Pour in the white wine and bring the mixture to a simmer. Cook for about 20 minutes, until the seafood is fully cooked and the flavors have melded together.
  5. Season the boreto with salt and pepper to taste. Garnish with fresh parsley before serving.
