Agrodolce

Here’s an original recipe for Agrodolce:

Ingredients:

  • 1/2 cup balsamic vinegar
  • 1/2 cup sugar
  • 1 sprig fresh rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Combine the vinegar, sugar, rosemary, salt, and pepper in a small saucepan over medium heat.
  2. Cook until the sugar dissolves, stirring occasionally.
  3. Reduce heat to low and simmer until the sauce reduces by half, about 20 minutes.
  4. Remove the rosemary sprig and let the sauce cool before serving.

Agrodolce is a traditional Italian sweet and sour sauce that can be used to glaze meats, as a dip for bread, or as a dressing for salads and roasted vegetables.
