Agliata

Ingredients:

  • 1 loaf of stale bread
  • 1 cup of red wine vinegar
  • 6 cloves of garlic
  • 1 bunch of fresh parsley
  • Salt to taste
  • Extra virgin olive oil

Instructions:

  1. Soak the stale bread in the red wine vinegar until it is completely softened.
  2. In the meantime, crush the garlic cloves in a mortar with a generous pinch of salt.
  3. Chop the parsley and add it to the mortar, continuing to crush the ingredients until you have a smooth paste.
  4. Squeeze out the excess vinegar from the bread, then add the bread to the mortar. Mix it with the garlic and parsley.
  5. Gradually add olive oil, continuing to stir, until you have a creamy sauce.
  6. Taste and adjust the seasoning with additional salt if necessary.
