Ingredients:
- 1 loaf of stale bread
- 1 cup of red wine vinegar
- 6 cloves of garlic
- 1 bunch of fresh parsley
- Salt to taste
- Extra virgin olive oil
Instructions:
- Soak the stale bread in the red wine vinegar until it is completely softened.
- In the meantime, crush the garlic cloves in a mortar with a generous pinch of salt.
- Chop the parsley and add it to the mortar, continuing to crush the ingredients until you have a smooth paste.
- Squeeze out the excess vinegar from the bread, then add the bread to the mortar. Mix it with the garlic and parsley.
- Gradually add olive oil, continuing to stir, until you have a creamy sauce.
- Taste and adjust the seasoning with additional salt if necessary.
