Ingredients:
- 1 kg of snails
- 1 onion
- 2 cloves of garlic
- 1 carrot
- 1 celery stalk
- 1 can of peeled tomatoes
- 1 glass of red wine
- Extra virgin olive oil
- Salt and pepper to taste
- A handful of fresh parsley
Instructions:
- Start by cleaning the snails. Rinse them under running water and leave them to drain.
- In a large pot, sauté the finely chopped onion, garlic, carrot, and celery in olive oil.
- Add the snails to the pot and let them cook for a few minutes.
- Pour in the red wine and let it evaporate.
- Add the peeled tomatoes, crushing them with a fork.
- Season with salt and pepper, then cover the pot and let it simmer for about two hours.
- A few minutes before turning off the heat, sprinkle with chopped parsley.
