Agghiotta di Lumache

Ingredients:

  • 1 kg of snails
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot
  • 1 celery stalk
  • 1 can of peeled tomatoes
  • 1 glass of red wine
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A handful of fresh parsley

Instructions:

  1. Start by cleaning the snails. Rinse them under running water and leave them to drain.
  2. In a large pot, sauté the finely chopped onion, garlic, carrot, and celery in olive oil.
  3. Add the snails to the pot and let them cook for a few minutes.
  4. Pour in the red wine and let it evaporate.
  5. Add the peeled tomatoes, crushing them with a fork.
  6. Season with salt and pepper, then cover the pot and let it simmer for about two hours.
  7. A few minutes before turning off the heat, sprinkle with chopped parsley.
